Pan-Roasted Mushrooms

This simple-but-sophisticated Mediterranean side dish features mushrooms and red onions cooked with garlic, balsamic vinegar and fresh thyme.

  • 12ounces fresh mushrooms (such as cremini, stemmed shiitake, and/or button), halved
  • 1/2cup chopped red onion
  • 1tablespoon olive oil
  • 2cloves garlic, minced
  • 2tablespoons balsamic vinegar
  • 1tablespoon snipped fresh thyme
  • 1/4teaspoon salt
  • 1/8teaspoon ground black pepper


  1. In a large skillet, cook mushrooms and onion in hot oil over medium heat for 10 to 12 minutes or until tender and golden brown, stirring occasionally. Add garlic; cook and stir for 30 seconds. Remove from heat. Carefully add vinegar, thyme, salt and pepper. Toss to coat.
